I filed a ticket for mine and was told that it could not happen Sad But i know it could and did my cat was a girl till it went to the cattery online, at the same time i lost her mate with the transfer and had to have him sent back to me. Lucky this does not happen more often but it sure stinks when it does!

Yes, perhaps it can happen certainly since the Online Cattery is still beta.
I think you faced an official business protocol statement.
I received such statement in the past as well with an other issue.
Changing gender isn't something which could just happen. It would require either specific program code or the most remarkable failure on the computer (it only changed one bit, at just the right instance, didn't change anything else, and didn't crash the program, web server, or operating system).

Since it's a safe bet they know if they specifically wrote program code to change gender, I'd suggest the claim "it can't happen" is well founded and believable.

It's far more likely that, all protestations to the contrary not withstanding, that it's simply user error. The cat was a boy (or girl) and always was a boy (or girl) and the impression that it was previously a girl (or boy) is based upon misreading, seeing what you expect rather than what is, or simply faulty memory.
nods, makes sense also Tad.
anything could happen with SL ... have you not seen cats departner, have double boxes upon sim resets? Well I have. And some boxes rerolled back and the cats birthed even better boxes. So maybe while I had those boxes unpacking my sim possibly reset and before they were born something happened ... I know i wasnt there for their birth, I did log off right away, but before I unpacked I had them as a pair opening together so I can breed them together. I know i saw a pink and green image frame and their gender displayed. It would be easier to keep track with less cats perhaps, but with my bajillion cats its whatever. Except now I cant do what I planned to do with them. O well

Doubled boxes, etc. are easily explained technically by the mechanics of resetting the sim state. That's not something kittycats controls.

As for sexes changing, the easiest way to check is to search your local chat logs. If you did an info printout on the box after you changed it to image mode, the proof of boy/girl in the box would be right there in your logs.

Yes, I know that its not something kittycats controls... and no one is saying that. I am just simply pointing out that maybe the boxes were possibly caught in something like a sim restart that has caused a switch. I am also not upset over it to start going back through logs which i doubt i have set as to save anyway, its just something that made me stop and do a double take and say "whoa one of you were a girl"..and as I shared this during an auction I was pointed to a thread about it. This is SL after all and I have seen many crazy bugs through out the years. Wouldn't be surprised if something did cause this to actually happen.
However "impossible" the change of sex is supposed to be, it just happened it me. I name my boxes and record all their information in a notebook. I was waiting for a certain pair of cats to have both a boy and a girl so that I could mate them. They had two girls. Finally, today they had a boy. I birthed him and a girl. Now the boy, "Atlas," was born a girl. I know the box indicated that he was a boy. I suppose from now on I will have to take screen shots of each cat before I birth it in order to be able to submit a ticket if this happens to me again.
I'll bet if you took a screen shot, you'd more likely go, "Wow, how could I have misread it? What was I thinking?"
I had it now more than a couple of times since gender is revealed before birth.
Not sure if it has anything to do with it but it can take ages for a new born box to rezz (on a no lag full sim) compaired to before gender on the box was present.
It used to be there instantly and I assume the info was imprinted in a split second.
Is it possible during this birth box connection with the server and the delay in it the new born connects with the server several times and receives mixed signals in this case mixed signals about the gender?
