Twitchy whiskers would be my favourite!
Not so sure as to activity level....I think they already act differently (maybe it has to do with energy level, age, or just randomness; some of my kitties run to be cuddled while others walk really slowly, and I also notice differences in playing with butterflies, the post and the ball). I don't know if I'd like a predictable cat or even if I'd want to breed for personality.
