Does not narrow it down much ....

but Sea Green is dominant to Pomegranate and recessive to Grey Matter

This indeed does prove that Sea Green is *recessive* to Pomegranate, as we know Mr. Posh is hiding Sea Green from seeing Jan 10th kitten. The special baby from Jan 2 is showing Pomegranate (which must be Tikki's hidden eye), and can only be hiding dad's Sea Green.
We can't immediately say that Sea Green is dominant to Grey Matter, as Dottie could hide a more recessive eye - so the kitten showing Sea Green will hide *either* Dottie's shown Grey Matter, or a more recessive hidden, if there is one. If you pull the hidden eye from the kitten, that will definitely tell us something!
So, Sea Green is recessive to Pomegranate - and thank you so much Auri, for the proof and the opportunity to see the Gyazos :-)
