Newer traits are always in demand and desirable, atleast in the world of competitive breeding, and performance would be the actual breeding value of the cat.

Personal preference plays a lesser part when it comes to high end cats in my opinion, because to make a high end cat with both value in itself (high price) and with high breeding value (good to get into your breeding program) you are somewhat constricted to having newer traits, especially fur and eye.

I'm not against high end cats as you describe them, but there are a lot of kitties advertised and priced as high end cats which are far from meeting that criteria. A high end cat to me shows the work the breeder has put into making it -so I'm wary of the cats showing new traits soon after they've been discovered, and priced and presented (it's not just the price, it's the image projected) as high end cats.
