I'm not sure if this is a problem that is more abundant in high stakes group, then the other groups. Sure there is a big difference between a price tag of 5k and 10k, but this kind of pricing occurs in all price ranges, like a 500 cat set for 1000.
Price settings of high stakes cats is just more visible when it comes to price difference due to the bigger number.
Anyways, what people price their cats for is not something i can do any about, i can only be responsible for my own prices, and to be honest I think people that overprice their cats by alot will struggle to sell any of them, the general buyer of higher end cats are pretty knowledgable.
But you raise a good point, people should always investigate a particular trait or fur and get a feeling for what the market is for what they are buying (especially the more they cost). If you buy a cat for 300 there is not much need for due dilligence, but if splurging on a 5-10-20-30k cat, look around, ask people and get to know what a cat might be worth before buying one.
Ultimately, the responsibility of paying a fair price for something, is with the buyer. That goes both for someone that got into cats 3 days ago and someone that got into cats 1.5 years ago. They both need to research what they are buying, only difference is that its easier to find out when you are an old time breeder.
