You aren't doing anything wrong, quite the opposite, repeated breeding of the test couples and getting differing results each time is perfectly normal and down to the fact that just like RL the cats are quite contrary
It doesn't take long to get out of hand if you open too many though so slow and methodical ensures results eventually.
Incidentally, reuse of cats once you have discovered their hids can be useful in speeding things along.
