I have this boy which has the blue eyes you want.
Fur: Snowshoe - Red
Eyes: Gerbera Blue (Mysterious|Small)
Shade: Natural
Tail: Fussy
Ears: Soft Curl
Whiskers: White (Plush)
Size: Normal

Or I have two of these, a boy and a girl: these have the soft fold ears you want and a fairly recessive eye that you could breed a blue eye over top of. Also the Curious tail is quite similar to Plush.
